I saw a comedian on television a few weeks ago who had the most hilarious routine. His premise was that twenty years ago when someone knocked at your front door, the entire family ran excitedly to the door to see who it was. It was a happy event. Today, if someone knocks at your door, everyone slips into the hallway, Dad turns out the lights and peeks through the front window curtains to see who it is. Of course, his delivery was more developed than my explanation, but you can image his facial features as he described these behaviors.
If you think about it, this is true! Unless you are someone you has continually made your home a place where everyone feels comfortable about stopping by. If so, congratulations! You haven’t succumb to the quick communication behavior that many of us have come to rely on. Text, social media or a short phone call while driving seem to have become the norm. I have been guilty of that one! So, I challenge myself as I challenge you to bring back the impromptu drop-in. For me, this means always having items on hand that can be turned into a quick bite that will please everyone.
I ALWAYS have avocados on hand. I eat one almost every day. So, what would be easier than avocado crostini? I have a Thermador Professional range with a grill, so grilling something quick was the first thing that comes to mind (I got this range on Craigslist for a fraction of the price of a brand new one). Before I had the range, I used a grill pan like it was going out of style! And, who doesn’t love anything on crostini?! Even if it’s just the crostini sprinkled with some kosher salt. Yum!
- 1 clove garlic
- 3/4 c packed fresh parsley leaves plus more for garnish
- 3/4 c packed fresh basil leaves
- 5 tbsp extra virgin olive oil
- 1 1/2 tsp red wine vinegar
- kosher salt and freshly ground pepper
- 2 avocados peeled and cubed
- 1 tbsp fresh lemon juice
- small loaf of french bread
Place the garlic clove in a food processor and pulse. Add the parsley, basil, olive oil, vinegar, salt and pepper and mix thoroughly. Set aside.
Cut the avocados into cubes, add lemon juice, season with salt and pepper. Set aside.
Slice the bread into 1/2 inch slices. Drizzle with olive oil and season with salt. Grill in a medium saucepan or grill pan until toasted.
Spread each crostini with the green sauce and add as many chunks of avocado that will fit on each slice. Season with salt and pepper and garnish with a leaf of parsley.
