Whether you need a quick fresh green salad dressing, a topping for macaroni or a vinaigrette for roasted vegetables, this classic and easy Dijon vinaigrette is your best friend.
Yes! You do see paper bowls. I am currently traveling across the country and paper and plastic are sometimes necessary. When we’re boondocking, I typically use plastic dishes so we don’t accumulate trash. But, on this particular day, we are in an RV campground and they pick up our trash every morning. So, paper it is!
The day I learned how easy it is to make my own salad dressings was the day I stopped buying the crazy expensive and less nutritious grocery store versions. I hope you enjoy this one as much as I do. Make it your own and add Parmesan cheese, a squeeze or two of fresh lemon juice or sliced shallots. I always have Dijon mustard in my refrigerator. My favorite is Grey Poupon (I have no affiliation – I just prefer it) I love this dressing!
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
- 1½ tbsp red wine vinegar
- ½ cup extra virgin olive oil
- 1 tbsp Dijon mustard
- Combine all ingredients in a small bowl or jar and mix. Use immediately.
