Tomato cucumber onion salad

This salad LIVES in my refrigerator all summer!  Of course, refreshed versions of it!  It is light and refreshing and unbelievably easy to make.  I keep adding tomatoes to the salad as they ripen in my garden because I have so many tomatoes that I have to think of more ways to use them.   Tomatoes are full of lycopene which is good for your heart.

An easy summer salad that is very refreshing. This is a perfect summer barbecue salad.
Servings: 4 servings

  • 4 fresh tomatoes
  • 2 large cucumbers seeds removed
  • 1 large red onion
  • cup ½ white vinegar or white wine vinegar
  • 1 tsp Kosher salt
  • tsp ½ Freshly ground black pepper
  1. Chop the tomatoes and cucumber into bite-sized pieces. Place in a large glass bowl with a lid.
  2. Next, cut the onion along its meridian. Place each half cut side down on your cutting board and slice from root/top downward. Cut these pieces in half again to create a half moon shape. Add onion to the tomatoes and cucumbers.
  3. Add the vinegar, salt and pepper (or more of each to your taste).
  4. Refrigerate for a minimum of a ½ hour.
  5. English cucumbers may be substituted if preferred, but are more expensive. If you can't find a red onion, any type of onion can be substituted. Shallots might be an interesting twist! Distilled white vinegar is the most inexpensive option for this recipe, however any vinegar can be used. Perhaps try a champagne vinegar? Make this salad your own! Add less tomato and more cucumber if you like! It's your new summer salad!
